Cameroon's Kati-Kati

Welcome to the beautiful North West Region of Cameroon. It is a grassland area full of natural resources.  Agriculture is the main occupation and people are very hardworking and loving.  

One of their favourite dishes is Kati-Kati.  One would need a live chicken to prepare this dish. 

Ingredients:

 

katikati

One whole Chicken                                                   

½ litre of Palm oil or any cooking oil                                      

Salt and pepper

                     

Preparation

After following your preferred manner of killing the chicken, roast it whole with the feathers

When sufficiently blackened, remove from the fire.

Remove the entrails.

Wash it well and roast again until tender

Slice into portions

Heat the palm oil in a pot  

Put in the chicken, salt and pepper

Turn when the meat turns brown. Cook for about twenty minutes on low heat.

 

Note:  The preparation is very simple, cheap but very delicious.
